Simple Pad Thai

- 8 OZ Pad Thai Noodles
- 2 TBSPS Sesame Oil
- 2 Eggs
- Protein (Chicken, beef, tofu, etc.)
- 1/4 CUP shallots
- 1 CUP bean sprouts
- 1/2 CUP crushed peanuts
- 1/4 CUP green onions
- 1/4 CUP cilantro
- Sauce
- 2 TBSP Lime Juice
- 2 TBSP Fish Sauce
- 2 TBSP Soy Sauce
- 2 TBSP Siracha
- 2 TBSP Brown Sugar
- 2 TBSP Rice Vinegar
Steps

Cook noodles according to directions.

Lightly scramble the eggs in sesame oil.

Remove eggs from pan, cook protein in pan to desired doneness.

Remove protein, saute shallot until fragrant.

Add noodles, eggs, protein into the pan.

Coat with sauce.

Top with sprouts, peanutes, green onions, and cilantro.
