Ingredients

  • 20 oz sweet potato, diced
  • 16-20 brussel sprouts
  • 2 red onions, chopped
  • 2 apples, chopped
  • 8 apple smoked chicken sausages, chopped
  • 1/2 cup fresh grated Parmesan cheese
  • 1 tbsp maple syrup
  • 5.3 oz Greek yogurt
  • 1 tbsp honey mustard
  • Red pepper flakes, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Non-stick cooking spray

    Preheat oven to 425F (220C) and line a sheet pan with parchment paper.

    Add diced sweet potatoes, chopped apples, brussels sprouts, chopped onions, and chopped chicken sausage to the pan.

    Spray mixture with non-stick spray and season with salt, pepper, and garlic powder. Toss to combine.

    Roast in the oven for 20-22 minutes until vegetables are cooked through and slightly caramelized.

    While roasting, prepare the maple honey mustard drizzle by mixing Greek yogurt, honey mustard, maple syrup, and red pepper flakes.

    Remove the sheet pan from the oven and drizzle the sauce evenly over the roasted ingredients.

    Sprinkle fresh grated Parmesan over the top.
