Honey Mustard Pork Chops

- 2-3 Pork Chops
- 3-4 Potatoes (Yukon or Russet)
- 2-3 Shallots
- 2 TBLS olive oil
- .5 cup chicken broth
- 1 TBLS honey
- 1 TBLS Dijon Mustard
- Salt
- Pepper

Preheat Oven to 400 Degrees.

Wash and dry the potatoes. Slice into small cubes.

Add 1 tbls oil to pan and cook diced shallots for about 5 minutes.

Add potatoes to shallots, then add chicken broth. Stir and cover. Bring to a boil, then simmer on low heat.

Mix honey, mustard and 1 tbls oil.

Trim fat from pork chops and season with salt and pepper.

Heat a pan and brown pork chops for 2 mins, flip, then place into oven for about 8-10 minutes.

Add one of water, chicken broth, or white wine to the pan to deglaze.
