Fajita Rice

Ingredients

  • 2-3 Boneless, Skinless chicken breasts
  • 1 Red Onion
  • 1 Green Bell Pepper
  • 1 Red Bell Pepper
  • 1-1.5 Cups Brown Rice
  • Garlic Powder
  • Paprika
  • Salt
  • Pepper
  • Sour Cream

Steps

    Cook the rice according to instructions.

    Cut the chicken into 1-2 inch strips. Coat in olives oil and season with garlic powder, paprika, salt and pepper.

    Heat olive oil on a pan, add red onion, green/red bell pepper. Cook until slightly charred.

    Remove veggies and set aside. Cook chicken strips for 3 mintues on each side.

    Add veggies and rice to the chicken.

    Add sour cream to the mixture and stir to combine.
