Ingredients
- 2 cups warm water (105-115 degrees) (474g)
- 1 Tablespoon active dry yeast
- 1/4 cup honey or sugar (85g honey or 50g sugar)
- 2 teaspoons salt
- 2 Tablespoons oil (canola or vegetable) (30 ml)
- 4 - 5 1/2 cups all-purpose or bread flour (500g-688g)

In a large bowl or stand mixer, combine yeast, warm water, and a pinch of sugar or honey. Let rest 5-10 minutes until foaming (proof yeast).

Add remaining sugar or honey, salt, oil, and 3 cups flour. Mix to combine.

Add another cup flour and mix. With mixer running, add more flour 1/2 cup at a time until dough pulls from bowl and is smooth and elastic, slightly sticky to touch.

Knead dough for 4-5 minutes on medium speed or 5-8 minutes by hand on lightly floured surface.

Grease large bowl with oil. Place dough inside, turn to coat, cover, and let rise in warm place until doubled, about 1 1/2 hours.

Spray two 9x5 inch bread pans with cooking spray. Punch dough down to remove air, divide in half, shape into logs, and place in pans.

Cover pans with a dry towel or sprayed plastic wrap. Let rise until dough is 1 inch above pans, about 45 minutes to 1 hour.

Preheat oven to 350F. Bake bread 30-33 minutes until golden and sounds hollow when tapped.

Invert loaves onto wire rack, brush with butter, and cool at least 10 minutes before slicing.

Store cooled bread in airtight container for 2-3 days at room temperature or up to 5 days refrigerated.
