Cheesy Beef and Rice

Ingredients
- 1 lb ground beef
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cayenne
- 1 tsp cumin
- 1 tsp dried cilantro
- 1 tsp chili powder
- 1 tbsp minced garlic
- 8 oz can tomato sauce
- 2 cups beef broth
- 1 cup long grain white rice (uncooked and rinsed)
- 1 tbsp olive oil
- White Queso Cheese Dip
- Flour tortillas (optional)
- Pico de gallo (optional)
- Fresh cilantro

Brown ground beef in a skillet over medium-high heat.

Season with salt, pepper, cayenne, cumin, dried cilantro, and chili powder; cook until beef is fully cooked, then drain excess grease.

Push beef to edges of skillet and add olive oil in the center.

Add rinsed uncooked rice to the skillet, stirring for a couple of minutes.

Add tomato sauce, minced garlic, and beef broth; stir well.

Cover skillet and cook on medium-low heat for about 20 minutes, or until rice is cooked.

Once rice is cooked, fluff with a fork, turn off heat, and let sit covered for 5 minutes.

Microwave queso cheese dip and pour over beef and rice mixture.

Top with fresh cilantro.

Serve as is or in tortillas with fresh pico de gallo if desired.
