Buttermilk Pancakes

- Dry Ingredients
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/4 teaspoons kosher salt
- Wet Ingredients
- 2 1/2 cups buttermilk
- 2 large eggs
- 3 tablespoons unsalted butter, melted and slightly cooled
- For Cooking
- Butter or oil for greasing the pan

Preheat Oven: Heat oven to 325F (165C) for keeping pancakes warm.

Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: Create a well in the center of the dry ingredients Add buttermilk and eggs Whisk eggs into the mixture, being careful not to overmix The batter should be slightly lumpy

Rest the Batter (Optional): For best results, let the batter rest in the refrigerator for up to 1 hour This allows the gluten to relax and results in more tender pancakes

Cook Pancakes: Heat a large skillet or griddle over medium-low heat Lightly grease the surface with butter or oil Pour approximately 1/3 cup batter per pancake Cook until bubbles form on the surface (2-3 minutes) Flip and cook another 2-3 minutes until golden brown

Keep Warm: Place cooked pancakes in a baking dish Keep warm in the preheated oven until ready to serve
